Summer Tea Garden Recipe Series: "Pink Flamingo Tea" Cherry Crumble

This month’s Tea Garden Recipe: Pink Flamingo Tea” Cherry Crumble

Makes 6 large servings 

 

Ingredients: 

For the Cherry Jubilee

 For the Crumble
  • 1 cup flour
  • 1/2 cup raw sugar
  • 75 grams soft butter

Additional Garnish

  • Whipped cream
  • Mint leaf

Procedure:

For the Cherry Jubilee

  1. Place water and OJ in pan and bring to 85C
  2. Add Pink Flamingo Tea and infuse for 4 min. then strain
  3. Mix sugar and corn starch in liquid, bring to boil and whisk until thickened
  4. Place sour cherries and cook for an additional 5-10 min.
  5. Reduce heat and pour vodka and flambé
  6. Stir until liquor has dissolved
  7. Reserve


 For the Crumble

  1. Mix all ingredients together until mixture resembles wet sand
  2. Reserve 


To Assemble:

  1. Place cherry jubilee into backing container
  2. Sprinkle crumble over top
  3. Bake in oven for 24 min. at 350F
