Notes from Guillaume Leleu’s Travel Diary - March 2010
“In March, the first harvests are produced all over the world and I receive, as every year, the first samples from all origins... I noticed one parcel, “By Air – Thailand”, as I receive few teas from Thailand, it tickled my curiosity. Upon opening this parcel, I realize that it is an Oolong; these blue-green teas have always been my favourite. I’m very critical of my Tea Tastings and this catches my attention even more. It is now 2:30 am, the factory is empty, time stopped and I prepare myself for a Tea Tasting session, where 70 teas are waiting for me. Among these, my palate, all my senses feel the excitement with this tea of an unusual shape “Ging.Hill Oolong-Thailand”. Purely marvelous! This original aromatic Oolong is simply without any comparison. This estate has been exclusively producing this tea for generations, according to the ancestral know-how. The Ginseng is carefully mixed with the tea by a steam process; the starch compresses the leaves and grants this tea a particular aspect. The leaf is captivating. I almost forgot this note, almost sour and pungent, arising from the Ginseng. This spice, coming from the other end of the world, is often used in the Orient in all of the kitchens as it offers thousands of therapeutic virtues and among them, one in particular, that the Ladies and the Gentlemen would appreciate the beneficial effects, but I would not say anything more…"
